Zuchinni and Squash Stir-Fry

1 Large Vidalia Onion Diced
1/2 Large or 1 medium sized zuchinni halved and sliced
2 small yellow squash halved and sliced
1 tablespoon toasted sesame seeds
soy sauce
tiny amount of red curry paste


Sweat diced onion over low heat using vegetable oil (olive oil, preferrably). When onions begin to turn translucent, turn heat to medium, add a litte more oil and throw in the squash and zuchinni. Stir-fry until sufficiently limp. Add soy sauce to taste (and to add a little more juice) and sprinkle on the sesame seeds. Add just a little (I took a butterknife and scraped a bit of paste from the top, perhaps 1/8 to 1/4 teaspoon) of the red curry paste, and stir well to mix.
Once you’ve got it stir-fried nice and done, spoon it over ramen noodles or rice and serve.
An alternate serving suggestion is to add drained black beans to the mixture and wrap in a tortilla to make burritos.
Tonight’s dinner was good.
